Spa Lunch!

I have so much to update you all on, from my trip to Anaheim, but for now I’m going to share a recipe for a fresh, quick and easy spa lunch I just prepared. This recipe is only 170 calories, so make two!

Tuna Thin
1 Arnold Sandwich Thin (or another 100 calorie bread)
1/2 2.5oz pkg tuna, packed in water (I like Bumble Bee)
1 Laughing Cow Light Garlic & Herb cheese wedge
3-4 fresh spinach leaves
1 generous slice of tomato
Lemon juice
Sea Salt & pepper

Toast the bread and let cool. Prepare tuna with lemon juice, salt & pepper.
Spread each side of the bread with 1/2 of the cheese
Assemble sandwich with tuna, spinach and tomato

Enjoy with a tall cold glass of flavored seltzer!
